Versatile Cabbage Soup

Note:
Make a different soup each time by changing the herbs or seasonings you use (Italian, Mexican, Thai, Chinese, etc.). The base of the soup is the vegetables and tomatoes. Add your own ideas to that. Eat soup all day for the first day and then once a day for 3-4 more days. I like it for breakfast. Eat healthy the other meals. I eat this soup at least 2-3 times a week just to maintain my weight. Add more nutrients by topping it with raw or toasted pumpkin seeds, almond, walnut or soy nuts.

Recipe:
1/2 cup each chopped celery, onions, and green bell pepper
2 cloves garlic, chopped
1/2 head cabbage, chopped
1 pkg. onion or vegetable dry soup mix
1 14oz. tomatoes, chopped, not drained
3 cups vegetable, chicken, or beef broth
1 14oz. drained kidney, black, or garbanzo beans
1 teaspoon pepper
1 teaspoon seasonings of your choice - fresh is best


Place chopped celery, onions, peppers, and garlic in 8-oz cup glass measuring cup. Cover and microwave 4-5 minutes on 100% power (900 watt microwave) or until tender crisp.
Add the cabbage and tomatoes. Cover: Microwave on 100% 4-5 minutes or until cabbage is tender.
Add the remaining ingredients, cover, and microwave on 100% 4-5 minutes or simmer on 50% for 8-10.
